Melt in your Mouth Slow Cooker Pot Roast

Ingredients

  • 2 tsp olive oil
  • koser salt and black pepper to taste
  • 2-3 lb Boneless beef chuck roast
  • 1/2 cup low sodium beef broth
  • 3 can Golden Mushroom Soup
  • 1 cup water
  • 2 medium onions, quartered
  • 5 large carrots, washed and cut into 2" pieces
  • 3 ribs celery, rinsed and cut into 2" pieces
  • 10-12 washed red potatoes, quartered

Preparation

Step 1

1. Add oil to skillet over medium-high heat. Prepare roast to sear by washing, drying and sprinkling with salt and pepper. Cook roast in hot pan, about 1-2 mins on each side. Set prepared roast on a plate, cover with aluminum foil and add beef broth to the used pan. Make sure to get all pieces from the bottom of pan and pour liquid into crockpot.

2. Add soup and water and combine well. Put rested roast into crockpot and cook on desired setting. Add vegetables about 3 hours before the roast is done.
