Ingredients
- Frosting:
- 3/4 cup butter softened
- 3 Tbs sugar
- 1 1/4 cups flour
- 1/2 cup cornstarch
- 1 tsp lemon peel
- 2 Tbs fresh lemon juice
- 1 cup powdered sugar
- 1/4 cup butter
- 1 tsp grated lemon peel
- 1-2 tsp fresh lemon juice
Preparation
Step 1
In large mixing bowl, combine 3/4 cup butter and sugar. Beat at medium speed until light and fluffy. Add flour, cornstarch, 1 tsp peel and 2 Tbl juice. Beat at low speed until soft dough forms. Shape dough into 1 1/2 inch diameter log. Wrap in plastic wrap or wax paper. Chill 1 to 2 hours or until firm.
Heat oven 350. Cut log into 1/4 inch slices. Place slices 2 inches apart on ungreased cookie sheet. Bake for 8-10 mins. Cool completely. In small bowl combine frosting ingredients. Beat at medium speed until smooth. Spread frosting evenly on cookies. Let dry before storing.
