Chocolate Chip Muffins

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mini chocolate chips

Preparation

Step 1

Grease bottoms of muffin cups. In a mixing bowl, beat the eggs slightly. Add milk and oil. In another mixing bowl, combine all the dry ingridients except the chocolate chips. Make a well in the dry ingredients and add wet ingredients. Stir just enough to moisten ingredients. Fold in chocolate chips. Batter will be lumpy. Fill cups 2/3 full. Bake 20-30 minutes at 400.
