Baked Oatmeal

I have made this ahead of time and baked it the morning of several times. I even made it for our oatmeal loving friend, Nick Wulf, during a remodel weekend in Altus. It serves up plenty and is hearty enough to last all morning long – even when demolition is involved!

Ingredients
- 2 cups frozen blueberries
- 2 Tbsp lemon juice, divided
- 1 (18-ounce) container regular oats
- 3 large eggs, beaten
- 1 cup firmly packed brown sugar
- 1 cup unsweetened apple sauce
- 1 Tbsp ground cinnamon
- 4 tsp baking powder
- 1 tsp salt
- 1 1/4 cups water
- 1 cup milk
- 1/4 cup melted butter
Preparation
Step 1
Toss blueberries in 1 Tbsp lemon juice and spread on the bottom of a lightly grease 13x9 inch baking dish. Combine oats and next 9 ingredients along with remaining Tbsp of lemon juice in a large bowl. Stir well. Pour mixture over blueberries. Bake covered at 350°F for 30 minutes. Uncover and bake an additional 20 minutes.
