Ingredients

  • 1 cup butter flavor crisco shortening
  • 1 cup extra crunchy peanut butter
  • 3/4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 2 each eggs, beaten
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 3/4 cups quick-cooking oats, uncooked
  • 1 1/4 cups raisns
  • 1 medium granny Smith apple, finely grated
  • 1/3 cup carrot, finely grated
  • 1/4 cup coconut

Preparation

Step 1

PREHEAT oven to 350.

COMBINE 1 cup shortening, peanut butter and sugars in large bowl. Beat at medium speed wtih electric mixer until blended. Beat in eggs.

COMBINE flour, baking powder, baking soda and cinnamon. Add gradually to creamed mixture at low speed. Beat until blended. Stir in oats, raisins, aplle, carrot and coconut. Drop by tablespoons onto ungreased baking sheet.

BAKE 9-11 minutes or until just browned around edges. Dont overbake.
