Ingredients
- 1 cup reduced fat sharp cheddar cheese -- shredded
- 1 cup long-grain rice (yields 2 cups cooked) -- cooked
- 1/2 cup canned sliced mushrooms -- drained
- 1/2 cup onion -- diced
- 1/4 cup skim milk
- 4 teaspoons reduced calorie margarine
- 1/4 teaspoon salt
- 2 packages frozen chopped broccoli -- thawed (10 oz pkgs)
- vegetable cooking spray
Preparation
Step 1
Combine first 7 ingredients in a medium saucepan; cook over low heat 4 minutes or until cheese melts, stirring constantly
Add broccoli and cook 2 minutes or until throroughly heated, stirring frequently
Spoon mixture into a 2-quart casserole coated with cooking spray. Bake at 350 for 30 minutes.
