Potato Soup

Ingredients

  • 3 tablespoons butter
  • 1 large onion, sliced
  • 1/2 cup carrot, thinly sliced
  • 1/2 cup celery, diced
  • 1 clove garlic, minced
  • 4 cups potato, diced
  • 2 cups chicken stock
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 teaspoon parsley
  • 2 cups milk
  • 1/2 cup cheddar cheese, grated, for garnish

Preparation

Step 1

Put first 5 ingredients into large saucepan. Saute vegetables until onion is soft and clear. Add potato, chicken stock, salt, pepper and parsley. Bring to a boil. Cover and simmer slowly until vegetables are cooked. Stir occasionally.

Stir in milk. Heat without boiling. Garnish with grated cheese.
