SALMON BAKED WITH ASPARAGUS AND POTATOES

Ingredients

  • 1.5 # asparagus, trimmed
  • 2 tbsp. olive oil divided
  • salt and pepper
  • 1.25 # Yukon gold potatoes, sliced crosswise 1/4" thick, skin on
  • 1.5 steelhead trout or salmon skin on
  • 1 tbsp. lemon juice
  • chopped fresh herbs for garnish - any combination e.g. rosemary, dill basal, chives, tarragon
  • 2 tbsp. unsalted butter

Step 1

Heat oven to 450F. Line a rimmed baking sheet with foil.
On the prepared baking sheet, toss asparagus with2 tsp. oil. Spread the asparagus in an even layer. Bake on oven's top rack until beginning to brown but crisp-tender, about 7 minutes. Transfer to a plate and set aside.
On the baking sheet, toss potato slices with another 2 tsp. oil. Spread in an even layer. Baker on oven's top rack until barely golden - 10 minutes. Remove from oven and reduce heat to 400F.
Arrange fish pieces in one layer on top of potatoes. Sprinkle with lemon juice and remaining 2 tsp. oil. Set the pan on the oven's middle rack and bake 5 minutes. Add the asparagus to the pan and bake another 2-3 minutes until fish is just cooked through.
Divide fish, potatoes, and asparagus between 4 plates. Top fish with a slice of butter. Sprinkle herbs over each serving
