Shrimp Lo Mein

Ingredients

  • 1 egg
  • 1 T Water
  • 1 T butter
  • 2-3 T oil
  • 1 medium onion, small chopped
  • 1/2 cup frozen cubed carrots, or shredded carrots
  • 1/2 cup frozen peas,
  • 1/4 head of Napa cabbage, shredded
  • 2 garlic cloves, minced
  • 1 lb. shrimp
  • 1 lb. cooked linguine
  • 4 T soy sauce
  • 1/2 - 1 tsp. sesame oil
  • 2 T Oyster Sauce
  • 1 T Sriacha chili sauce
  • 1 1/2 cup chicken broth
  • 2 T cornstarch
  • 2 T cold water
  • 1/2 tsp. ground black pepper
  • 2 green onions, green parts finely chopped

Step 1


Cook linguine according to package directions.
Mix the egg and water together.
Melt the butter in a large skillet or wok over medium heat or until sizzling.
Add in egg and leave flat for about 2 minutes or until cooked through; remove to a plate then chop.

Heat oil in the same skillet; add in onion, carrots, cabbage, and peas and sauté 3 minutes.
Add in garlic and the peeled,deveined shrimp and cook until the shrimp turn pink and curl up, about 2-3 minutes. Transfer the shrimp and veggies to a plate and reserve.

In a bowl mix together: 4T soy sauce, 1/2 sesame oil, 2 T Oyster Sauce, 1 T. Sriacha chili sauce, 1 1/2 cup chicken broth.
Whisk the cornstarch into 2 T cold water. Once dissolved, add to the sauce. Add the sauce to the pan let it simmer and thicken, toss in vegetables, shrimp, noodles. Toss and serve.
