Mojito

Delicious! Tobin and I have been a big fan of the Mojito ever since Aaron Boston first introduced them to us in Charleston. Always looking like more work than was worth we continued to let friends like Any Ratliff make them in Altus. But after finding this simple recipe, we decided to give them a try ourselves, and they really couldn’t be easier. I don’t use the whole bunch of mint – I just guess and use about 10 sprigs worth of leaves. The way we make them with sprite and sugar makes them really sweet, but that makes them really easy to drink – watch out!

Ingredients

  • 1 bunch fresh mint leaves
  • 6-8 Tbsp sugar
  • 1/2 cup fresh lime juice
  • 1 cup white rum
  • 6 cups club soda (I use sprite)
  • 6 cups crushed ice

Preparation

Step 1

Wash and stem the mint leave, reserving 6 whole sprigs for garnish. Place the mint leaves in the bottom of a sturdy pitcher and add the sugar. Mash the mint leaves and sugar together, using the tip of a wooden spoon – this extracts the mint oils. Add the line juice and rum and stir until the sugar is dissolved. Just before serving, add the club soda (sprite) to the pitcher and gently stir to mix. Partially fill 6 highball glasses with ice. Add the mojito mixture and garnish each glass with a sprig of fresh mint.
