Chicken and Yellow Rice

Ingredients

  • 3 pounds Chicken
  • 1/2 cup olive oil
  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 1 large ripe tomato, finely chopped
  • Chorizo, sliced thin
  • 2 garlic cloves, minced
  • 1 tsp lemon juice
  • 1 bay leaf
  • 1 tsp salt
  • 1/4 tsp hot sauce
  • Yellow coloring
  • 1 cup hot chicken broth
  • 1/4 cup dry wine
  • 1 sprig parsley
  • 2 cups long grain rice
  • 2 1/4 cups chicken broth
  • 1/4 cup canned peas
  • 1 jar pimentos, drained
  • Dry white wine

Preparation

Step 1

Boil Chicken until cooked, drain in colander to cool. De-bone and set aside. In skillet add oil, saute onion, Pepper, Garlic until tender, add chorizo. Cook on low for 15 minutes, add tomatos, lemon juice, hot sauce, salt. parsley. Simmer. Add yellow coloring. Transfer to large oven pan. add skillet contents, Chicken Broth, chicken. Bring to a boil add rice, stir for 1 minute. Coven and put oven safe pan in over bake at 350 degrees for one hour. When rice is cooked put peas and pimentos on top sprinkle with wine. Cover for five minutes. Serve hot.
