Ingredients
- Sweet & Hot Rub:
- 1 large roasting chicken (4 to 5 pounds)
- 8 tbsp sweet and hot rub (below)
- 1 - 12 oz. can of beer
- 3 tbsp kosher salt
- 1 tbsp black pepper
- 3 tbsp paprika
- 3 tbps brown sugar
- Stir ingredients together.
Preparation
Step 1
Sprinkle 2 tbsp of rub in the cavity of chicken.
Sprinkle 4 tbsp rub on the outside.
Open can of beer and make a few additional holes in the top.
Pour out or drink half of the beer and add the remaining 2 tbsp spice rub to the can.
Place can of beer in cavity of chicken and tie legs together.
Chicken can be place upright or on its side when cooking.
Roast on grill or in oven for 2.5 hours.
