Ingredients
- SAUCE:
- 4 pounds mussels
- 1/2 cup white wine
- 2 sprigs fresh thyme
- (or 1 tspn dried thyme)
- 1 bay leaf
- 2 sprigs parsley
- A few grinds of pepper
- 1/4 cup olive oil
- 1 teaspoon minced fresh garlic
- 2 tablespoons capers
- 1/4 cup black olives (Greek are best) sliced
- 1/4 cup mussel broth from above
- 1/4 cup chopped parsley
- 1/2 teaspoon red pepper flakes or to taste
- 3/4 pound spaghetti of choice, preferably fresh cooked al dente

Preparation
Step 1
Steam mussels for ten minutes in broth (white wine with thyme, bay leaf, parsley, and pepper), tossing occasionally.
Heat olive oil. Add garlic, capers, and black olives; saute briefly. Add mussel broth and shucked mussels; heat just enough to pour over hot pasta. Just before serving stir in chopped parsley and red pepper. Serve over pasta.
This recipe yields 4 to 5 servings.
