Mussels Sicilian Style - {Spaghetti Con Cozze}

Ingredients

  • SAUCE:
  • 4 pounds mussels
  • 1/2 cup white wine
  • 2 sprigs fresh thyme
  • (or 1 tspn dried thyme)
  • 1 bay leaf
  • 2 sprigs parsley
  • A few grinds of pepper
  • 1/4 cup olive oil
  • 1 teaspoon minced fresh garlic
  • 2 tablespoons capers
  • 1/4 cup black olives (Greek are best) sliced
  • 1/4 cup mussel broth from above
  • 1/4 cup chopped parsley
  • 1/2 teaspoon red pepper flakes or to taste
  • 3/4 pound spaghetti of choice, preferably fresh cooked al dente

Preparation

Step 1

Steam mussels for ten minutes in broth (white wine with thyme, bay leaf, parsley, and pepper), tossing occasionally.

Heat olive oil. Add garlic, capers, and black olives; saute briefly. Add mussel broth and shucked mussels; heat just enough to pour over hot pasta. Just before serving stir in chopped parsley and red pepper. Serve over pasta.

This recipe yields 4 to 5 servings.
