Ingredients

  • 4

    pounds mussels

  • 1/2

    cup white wine

  • 2

    sprigs fresh thyme

  • (or 1 tspn dried thyme)

  • 1

    bay leaf

  • 2

    sprigs parsley

  • A few grinds of pepper

  • SAUCE:

  • 1/4

    cup olive oil

  • 1

    teaspoon minced fresh garlic

  • 2

    tablespoons capers

  • 1/4

    cup black olives (Greek are best) sliced

  • 1/4

    cup mussel broth from above

  • 1/4

    cup chopped parsley

  • 1/2

    teaspoon red pepper flakes or to taste

  • 3/4

    pound spaghetti of choice, preferably fresh cooked al dente

Directions

Steam mussels for ten minutes in broth (white wine with thyme, bay leaf, parsley, and pepper), tossing occasionally. Heat olive oil. Add garlic, capers, and black olives; saute briefly. Add mussel broth and shucked mussels; heat just enough to pour over hot pasta. Just before serving stir in chopped parsley and red pepper. Serve over pasta. This recipe yields 4 to 5 servings.
