Ingredients
- 1 Tbs honey
- 3 Tbs. cider vinger
- 3 Tbs. extra-virgin olive oil
- 1/4 tsp. salt
- 1/8 tsp. ground pepper
- 1 apple, cored and sliced very thin
- 1 1/4 cup celery
- 1 med. head red leaf lettuce,torn in bite sized pieces
- 1/4 c. fresh parsley
- 1/2 c. hazelnuts, walnuts or pecans
- 6 oz. roquefort cheese ( about 1 1/2 c.)

Step 1
whisk honey, vinegar, oil, salt and pepper in a small bowl until combined to make vinaigrttr. In medium bowl, toss apple and celery with 2 Tbs. vinaigrette; let stand 5 min. Toss lettuce, parsley and remaining vinaigrette in large bowl, adjust seasonings with salt and pewpper. Divide greens among individual plates; to each with portion of apple and celery misture, nuts and Roquefort. Serve immediately
