Teriyaki Couscous

Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped eggplant
  • 3 tsp. freshly grated ginger
  • 2 Tbsp. low-sodium soy sauce
  • 1 tsp. white vinegar
  • 3 cups cooked couscous

Preparation

Step 1

Heat the oil in a large skillet over medium heat. Add the vegetables, 2 tsp. of the ginger, and 1 Tbsp. of the soy sauce. Saute 7 to 10 minutes until the vegetables are tender and beginning to turn golden.
Add the remaining soy sauce and ginger, vinegar and couscous. Cook for 1 minute over high heat, stirring often to blend the ingredients.
