Ham and Spinach Souffle

Ingredients

  • 4 Tbs butter
  • 1/4 cup flour
  • 1/2 tsp dry mustard
  • 1 cup milk
  • 1 10oz pkg frozen chopped spinach
  • 1/4 lb cheddar cheese shredded (1 cup)
  • 2 oz cooked ham chopped (1/2 cup)
  • 1 Tbs dried bread crumbs
  • 4 large eggs
  • 1 large egg white
  • 1/2 tsp cream of tartar

Step 1

In 3 quart sauce pan over medium heat melt butter. Stir in flour and mustard; cook 1 minute. Stir in milk; cook stirring until mixture boils and thickens. Squeeze spinach dry; stir into sauce with cheese and ham. Cool
Meanwhile heat oven to 350. Grease 1 1/2 quart souffle dish or straight sided casserole; sprinkle with bread crumbs.
In small bowl, with mixer at high speed, beat egg whites with cream of tartar to stiff peaks. Stir whites, 1/3 at a time, just until blended.
Pour mixture into souffle dish. Make top hat. With back of spoon, make a 1 inch deep indentation around mixture 1 inch from the edge.
Bake 35-40 minutes until knife comes out clean. Serve immediately. Makes 4 servings.
