- 1 tablespoon Sherry vinegar
- 2 ramp bulbs, finely chopped
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon honey
- 4 tablespoons olive oil, divided
- Kosher salt and freshly ground black pepper
