CHICKEN****Chicken & Avocado Wrap with Salsa Yogurt Dip

17/04/15-Made up on the fly for a lunch. Yummy. They would probably transport to work if you didn't cut them in half and if you used a firmer avocado.

Ingredients

  • 1 large whole wheat tortilla
  • handful of baby spinach, spring mix or baby kale/chard mix
  • 2 oz. shredded, poached chicken
  • 1/6 th ripe avocado
  • salt & pepper to taste
  • 1/4 cup Greek yogurt
  • 1-2 tablespoons homemade Spicy Red Mexican Sauce (or hot salsa, in a pinch)

Preparation

Step 1

Lay greens over tortilla, topping with the chicken strips and the avocado. Sprinkle with Maldon salt to taste, wrap tightly and cut in half.

Combine the yogurt with the chili sauce and mix well.

Serve the rolls with the chili yogurt on the side for dipping or spooning.
