Frosted Cinnamon Apple Bars
By srumbel
Usually there are a few bags of Crunch Pak apples in our crisper drawer waiting to be eaten, so I decided to use some in these oat bars. I also had an extra bag of cinnamon baking chips, so those went into the bars too.
To finish off these apple bars, I whipped up a creamy cinnamon frosting. Be careful if you taste the frosting because you might not want to stop.

Ingredients
- For the Frosting:
- 3/4 cup butter, softened
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 2 1/2 cups old-fashioned oats
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups shredded Crunch Pak apples
- 1 cup cinnamon baking chips
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups powdered sugar
- 1/2 teaspoon cinnamon

Preparation
Step 1
Beat the butter and sugar until creamy. Add the eggs and vanilla and beat again.
Stir together the flour, oats, salt, and cinnamon. Add the flour mixture alternately with the apples.
Stir in the cinnamon chips by hand. Spread the batter in a greased 9×13 glass baking dish. Bake for 24-25 minutes at 350 degrees. Do not over bake. Remove and cool completely.
Beat the butter, vanilla, and salt until creamy. Add the powdered sugar, cinnamon, and whipping cream a little at a time until everything is mixed in. Let it whip on med-high speed until creamy. Spread over the cooled bars. Cut into 24 squares. Store in a sealed container on the counter.
