Ingredients
- 8 bone-in chicken thighs (3 pounds)
- 1 Tbsp chopped fresh rosemary or 1 tsp dried, crumb rosemary
- 1 1/2 tsp chopped fresh oregano or 1/2 tsp dried oregano
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 6 small red potatoes, quartered
- 3 cloves garlic, thinly sliced
- 2 tbsp olive oil

Preparation
Step 1
1. Preheat oven to 375F.
2. Put chicken on a large rimmed baking sheet and sprinkle with half of rosemary, oregano, salt, and pepper. Toss together potatoes, garlic, remaining spices, and oil in a bowl. Scatter potatoes around chicken.
3. Bake, uncovered, in upper third of oven until potatoes are tender and crisp and chicken is cooked through, 1 to 1 1/4 hours.
