Spicy Stuffed Poblano Peppers

Ingredients

  • 1 bag Success White Rice, Success Brown Rice, or Success Jasmine Rice
  • 4 poblano peppers, split lengthwise and seeded
  • 1/4 cup parmesan cheese, grated
  • 8 thin sliced bacon strips
  • 1 package (8 oz.) cream cheese, softened
  • salt and ground black pepper
  • 1 pound hot Italian sausage, bulk

Preparation

Step 1

Prepare rice according to package directions.

Preheat oven to 400 degrees.

In a large bowl, combine the cheeses, sausage and cooked rice. Mix well.

Stuff each poblano pepper half with mixture.

Wrap pepper with a slice of bacon.

Place eight pepper halves on a baking sheet.

Bake 25 minutes. Turn on broiler and cook for approximately 5 minutes or until bacon is crisp.
