Ingredients

  • 3 pound Boston Butt pork roast,
  • cut into about 12 pieces
  • 1 large onion, quartered
  • 1 Tablespoon cumin
  • 1 Tablespoon coriander
  • 1 Tablespoon oregano
  • 1 small can chipotle chiles in adobo sauce, chopped
  • 2 bay leaves
  • 1 Tablespoon fine sea salt
  • 1 quart chicken broth
  • ( enough to cover meat )
  • 2 Tablespoons shortening or lard

Step 1

Place the pork pieces in a stock-pot with the onion, spices, bay leaves, salt, chiles and adobo sauce. Cover meat with broth. Cover pot, bring to a boil at high heat, and cook for 5 minutes. Reduce heat to low, uncover pot, and simmer for about 3 hours, until meat pulls apart with a fork. Remove meat pieces using a slotted spoon, place on a platter and allow to cool. Preheat oven to 450 degrees. Cut meat into 1 inch cubes. Melt shortening in a cast-iron skillet or over-proof casserole. Add pork and toss to coat with hot shortening. Cook, uncovered, for about 30 minutes, until meat is light brown and sizzling hot.
