Raspberry Oatmeal Streusel Bars

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 3/4 cup unsalted butter, chilled and cut into pieces
  • 1 1/2 cups uncooked quick-cooking oats
  • 1 cup red raspberry jam
  • 1/2 cup sliced almonds
  • confectioners sugar for garnsih

Preparation

Step 1

1. Preheat oven to 350F. Butter a 9" square baking pan, set aside.

2. In a large bowl, stir together the flour, baking powder, salt, sugar and brown sugar until well blended. Cut in the butter until crumbly, mix in oatmeal. Press 2/3 of the mixture into the bottom of the baking pan.

3. Spread the jam over the crumb layer, then sprinkle with the remaining crumbs. Top with almonds and pat down firmly.

4. Bake for 30-35 mins or until golden. Cool in the pan on a wire rack. Sprinkle with confectioners sugar and cut into bars.
