Preparation

Step 1

VANILLA COOKIE CRUST
In a small bowl stir together crushed cookies and melted butter till well combined. Press crumb mixture evenly onto the bottom of a greased 9-inch springform pan.

STRAWBERRY FILLING
In a large bowl combine cream cheese, sugar, and cornstarch. Beat with an electric mixer till smooth. Add eggs and egg yolk, one at a time, beating well after each addition. Beat in rum and lime jucie. Stir in sliced strawberries. Pour the cream cheese mixture over the crust.
Bake at 350 for 15 minutes. Lower temperature to 225 and bake 1 hour 10 minutes or till the center no longer looks wet or shiny. Remove the cake from the oven and run a knife around the edge of the pan. Chill, uncovered, overnight.

STRAWBERRY GLAZE
In a small saucepan stir together preserves, cornstarch, and lemon juice. Cook and stir till thickened and bubbly. Cook and stir 2 minute more. Stir in rum. Pour over cheesecake. Garnish with strawberries. Chill till serving time.
