Ingredients
- 1 large cucumber
- 1 small to med size red onion, sliced and separated into rings
- 8 small cocktail tomatoes sliced, you can use any kind
- 1/2 cup vinegar
- 1/4 cup sugar
- 1 cup water
- 2 teaspoons salt
- 1 teaspoon fresh coarse ground black pepper
- 1/4 cup oil
- 1 teaspoon chile powder
Preparation
Step 1
1. Combine all ingredients in a large bowl.
2. Toss well to mix.
3. Refrigerate at least 2 hours before serving.
