Salsa Picante with Shrimp

Ingredients

  • 4 C water
  • 1 1/2 # lg shrimp, unpeeled.
  • 2 avocados, peeled and cubed
  • 1/4 Clime juice
  • 6 C (3#) tomatoes, cubed
  • 4 C (3lg) onions, chopped
  • 8-10 cloves garlic, minced
  • 1/4 C chopped fresh cilantro
  • 3 jalapeno peppers, seeded and chopped
  • 1 T cumin
  • 2 t paprika
  • 1 t salt
  • Lettuce leaves
  • Tortilla chips

Preparation

Step 1

Cook shrimp in boiling water, 3-5min until pink. Drain and rinse with cold water. Chill; peel and devein. Cut into quarters, set aside.
Combine avocados and lime juice in sm bowl, set aside.
Combine shrimp, tomatoes, and next 7 ingred in large bowl, gently stir in avocados. Chill at least 1 hr. Serve in lettuce lined bowl with tortilla chips
