Avocado-Tomatillo Salsa

A great twist on a salsa verde recipe!!

Ingredients
- 1 lb tomatillos, stemmed and halved
- 1/4 red onion, sliced
- 1 jalapeno chile, stemmed, halved and seeded
- 3-4 garlic cloves
- 1 ripe avocado, pitted and peeled
- 1 cup cilantro leaves and tender stems
- Juice of 1 lime
- salt and pepper to taste

Step 1
Preheat oven to 425 degrees. In a small roasting pan, toss together tomatillos, onion, jalapeño and garlic with a couple tablespoons of olive oil and salt. Roast until tender and browned in places, 25 minutes. Cool and place in blender or food processor. Add remaining ingredients and blend until smooth. Refrigerate for at least an hour to let flavors meld. Serve with chips, on fish tacos or any other Mexican delight.
