Grilled Asparagus

Quick, easy and delicious way to serve up asparagus. For an added punch of flavor, add crushed red pepper or minced garlic to the olive oil mixture before brushing asparagus.

Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 bunch asparagus, trimmed
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • grilled lemon slices
  • shaved parmesan slices

Preparation

Step 1

In a small bowl, combine olive oil, lemon zest, and lemon juice.

Preheat the grill to medium-high heat (350-400 degrees). Spray grill rack with nonstick nonflammable cooking spray.

Place asparagus in a single layer over prepared grill; brush evenly with olive oil mixture. Grill for 2 to 3 minutes, turning frequently, or until asparagus are tender.

Remove from grill. Sprinkle evenly with salt and pepper before serving.

Garnish with grilled lemon slices if desired, and shaved parmesan cheese.
