Barbecue Bacon Cheeseburgers

  • 1 lb bacon, cooked until crisp, divided
  • 2 lbs ground chuck
  • 3 Tbsp hickory-flavored barbecue sauce
  • 1 Tbsp liquid smoke
  • 1/2 tsp salt
  • 12 sliced sharp Cheddar cheese, divided
  • 1 large sweet onion, cut into 6 (1/4-inch thick) rings
  • 6 hamburger buns, split and toasted
  • Barbecue sauce, lettuce leaves, tomato slices (optional)

Preparation

Step 1

Preheat grill to medium-high heat (350º - 400º). Spray grill rack with nonstick nonflammable cooking spray.

In a large bowl, crumble 10 slices bacon; set remaining bacon aside. Add ground chuck, 3 Tbsp barbecue sauce, liquid smoke, and salt; gently stir to combine.

Divide mixture into 12 equal portions, and shape each into a 4-inch patty.

Cut 6 slices of cheese into quarters. Place 4 cheese quarters on top of 6 patties. Place remaining patties on top of cheese, and press edges of patties together to seal.

Grill patties, covered with grill lid, for 5 to 6 minutes per side, or to desired degree of doneness. Top each patty with 1 slice remaining cheese, and cook for 1 minute, or until cheese is melted.

Grill onion rings, covered with grill lid, for 3 to 4 minutes per side, or until onions are browned and tender.

Spread additional barbecue sauce over bottom halves of buns, if desired. Top as desired with lettuce, tomato slices, grilled onion, burgers, and reserved bacon slices. Cover with bun tops. Serve immediately.
