CURRIED CAULIFLOWER SOUP

Ingredients

  • 1 large cauliflower (separated and chopped)
  • 1 (28oz) can diced and peeled tomatoes
  • 1 (14oz) can veggie broth
  • 1 medium onion chopped
  • 1/2 tsp garlic powder
  • 2 – 2 1/2 tsp curry powder
  • 1/4 tsp ground cumin
  • Salt and pepper to taste

Preparation

Step 1

Combine cauliflower, tomatoes w/juice, broth, onion, and garlic powder to slow cooker. Cover and cook on low heat for 7 hours (4 hrs on high) until cauliflower is tender.
Increase heat to high. Stir in curry powder and cumin. Season with salt and pepper to taste. Cover and cook for 1/2 hour. Serve hot.
