  • 1 pound high-quality roast beef, thinly sliced
  • 1/4 pound provolone cheese, thinly sliced
  • 1 package potato hot dog buns (8 buns)
  • 1 yellow onion, thinly sliced
  • 2 cups beef broth
  • Kosher salt and freshly cracked black pepper
  • Extra virgin olive oil

Step 1

In a medium nonstick skillet, heat 2 tablespoons olive oil over high heat. Once oil is hot, add onions, cook until the onions are starting to brown slightly, then reduce heat to medium-low. Cook onions at medium-low for 7 to 10 more minutes, or until they are soft and caramelized.

Once onions are caramelized, add beef stock and roast beef — one slice at a time, so it will be easier to serve. Cook until stock and beef are hot. Keep on low until ready to serve.

Cut each hot dog bun in half crosswise. Fill each half of bun with meat and onion, and top with a slice of cheese. The meat should be hot enough to melt the cheese. Serve immediately.
