Audi's carrot muffins

Ingredients

• 1 1/4 c whole wheat flour
• 3/4 c sugar
• 1/4 c natural bran
• 2 tsp ground cinnamon
• 1/8 tsp nutmeg
• 1 tsp baking soda
• 1/2 tsp salt
• 3/4 tsp baking powder
• 2 eggs
• 1/2 c veg oil 1 c raisons
• 3 c grated carrots

Preparation

Step 1

combine dry ingredients in a bowl
beat eggs and oil until light and stir in carrots
add egg mixture to dry stirring until moist
stir in raisons and spoon batter into greased tins

bake 375 for 25-30 mins
