Cheesy Orzo

Ingredients
- 1 tbsp extra-virgin olive oil
- 1/4 onion, chopped
- 1 clove garlic, chopped
- 14 oz chicken or vegetable broth/stock
- 1 cup orzo pasta
- 1/4 cup grated parmigiano or romano cheese

Preparation
Step 1
1. Preheat a medium pot over moderate heat.
2. Add oil, onion and garlic and saute 2 or 3 minutes.
3. Add broth to the pan and bring to a boil.
4. Stir in orzo and return broth to a boil.
5. Cover pot and reduce heat to simmer.
6. Cook 10-15 minutes, stirring occasionally, until liquid is absorbed and pasta is tender.
7. Remove lid and stir in cheese.
