aDressing: Pomegranate-Chipolte Vinaigrette

Ingredients

  • 1/3 cup unsweetened pomegranate juice
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. olive oil
  • 1 Tbsp. brown sugar
  • 1 tea., freshly grated orange zest
  • 1 small shallot, minced
  • 1 small clove garlic, minced
  • 1/8 tea. salt
  • 1/8 tea. pepper
  • 1/8 tea. ground chipolte chile powder
  • pinch of ground cloves

Preparation

Step 1

Whisk all ingredients in a large bowl or puree in a blender.

Toss with 6 cups salad greens and divide among 6 plates.

Accompaniments: roasted pears, pomegarnate seeds, candied nuts
