Mom's Hurry-Up Tex-Mex Dinner

I came up with this one night when I was looking in the fridge and cabinets to come up with something for dinner. My kids loved it and it's a great way to use up leftovers. It's very versatile, too, so just use your imagination.

Ingredients

  • 8 - 10 flour tortillas, burrito size
  • 2 cups of cooked rice (leftovers work great here)
  • 1 can refried beans, your choice
  • 1 jar of salsa
  • chopped onion (optional)
  • chopped black olives (optional)
  • 2 cups cheddar, shredded or 1 jar/can of cheese sauce
  • 1 cup shredded, cooked chicken or beef, or cooked ground beef (optional)

Preparation

Step 1

Heat rice with a little water in a skillet, then add the refried beans and half the jar of salsa, and whatever meat, if desired. Stir gently until combined and warmed through. Place about 1/4+ cup of mixture down one side of a tortilla, from end to end. If desired sprinkle with chopped onion and olives, then a little cheese. Roll up, leaving the ends open, and place seam side down in a 9 X 13 baking dish coated with Pam. Continue with the rest of the tortillas, using up the rest of the filling, until the pan is full. Spread reserved salsa over tortillas in pan, then sprinkle with extra cheese. Bake in 350F oven for about 30 minutes or until cheese is bubbly and all is heated through. Enjoy.
