Mojito Fruit Salad

Ingredients

  • 3/4 cup sugar
  • 1/2 cup water
  • Zest from 1 lime
  • 1 package mint leaves
  • 1 TBS fresh lime juice
  • 1 pint blueberries
  • 1/2 honeydew melon, balled

Preparation

Step 1

1. Bring water, sugar, and lime zest to a roiling boil in small saucepan. Reduce heat to simmer for 3 minutes. Remove from heat.

2. Add mint leaves and let sit for 30 minutes.

3. Strain zest and leaves.

4. Stir fresh lime juice into syrup. Cool.

5. Pour over tossed fruit, and chill for 30 minutes or more.

6. Serve in champagne or martini glasses; garnish with fine lime zest and lavender buds.

Makes 6 servings. Each serving = 3 Weight Watchers points.
