Ingredients
- 1/2 lb extra lean ground beef
- 1/2 lb ground pork
- 1 egg
- 1/4 cup parmesan cheese
- 1/2 cup fresh breadcrumbs
- 1 tablespoon garlic, minced
- 1/2 teaspoon seasoned salt
- black pepper
- 1/4 cup half and half
- 1/4 cup fresh parsley, finely chopped
- 1/2 cup rice (1/2 to 3/4)
- 3/4 cup ketchup (3/4 to 1)
- 1/4 cup green peppers, chopped finely
- 1/4 cup onions, chopped finely
- 4 green peppers, cut in halves, lengthwise and seeds removed
- Sauce
- 1/2 cup ketchup
- 1/4 cup chili sauce, sweet
- 1/4 cup water
Preparation
Step 1
1. Preheat oven to 350 degrees F.
2. Combine first 14 ingredients(ground beef-onion) in large bowl. Stuff meat mixture into green pepper halves; mounding to use all. Top with 1 tablespoons ketchup per pepper. Place peppers in baking dish.
3. Combine sauce mixture in small bowl and pour around peppers.
4. Cover with foil and bake for about 30 minutes until meat is completely cooked. Uncover; spoon sauce over peppers, if desired, and bake an additional 5-8 minutes.
These were great! Only quibbles - the rice took forever to cook up - may have been because I had to defrost hamburger, so it wasn't very moist, and because I used dried breadcrumbs instead of fresh - next time I'd parboil the rice. Also just simmered the peppers before stuffing them to soften them up a bit. I'd also just make more of the sauce and put it on top of the peppers, rather than topping with ketchup first, and then putting the sauce around.
