  • 3 cloves garlic, minced
  • 2 tsp oregano
  • 1 Tbsp dried rosemary
  • salt and pepper to taste
  • 2 lbs boneless pork loin roast
  • 1/4 c olive oil
  • 1/2 c white wine

Step 1

Preheat oven to 350 degrees F.

Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.

Roast pork loin in the oven until thermometer reads 145 degrees F (about an hour), basting with the pan juices every 10-15". Remove the roast from the pan. Heat the wine in the pan on top of the stove and stir to loosen any browned bits of food on the bottom. Serve with pan juices.
