Bread, Whole Wheat Rolls

Ingredients

  • 2 packages or tablespoons active dry yeast
  • 1/2 cup warm water
  • 1 3/4 cup milk, scalded
  • 1/2 cup sugar
  • 1 tablespoon salt
  • 3 tablespoons shortening
  • 4 cups whole wheat flour, stirred
  • 3 cups all-purpose flour, sifted
  • 2 eggs, beaten

Preparation

Step 1

Soften active dry yeast in 1/2 cup warm water (110 degrees). Combine milk, sugar, salt, and shortening; cool to lukewarm. Add 1 cup whole wheat flour and 1 cup white flour; beat well. Beat in yeast and eggs. Stir in 3 cups whole wheat flour and about 2 cups white flour, or enough to make a soft dough. Place in greased bowl; turn; cover; refrigerate.
Two hours before serving, shape into rolls. Let rise until double (about 1 1/2 hours). Bake at 400 degrees for 15 to 20 minutes. Brush with butter.
