Truffled Egg Salad Sandwiches

Ingredients

  • 8 hardboiled eggs
  • 1/4 cup mayonnaise
  • 1/4 cup minced red onion
  • 1 TBS capers, minced and chopped
  • 1 1/2 tsp truffle oil
  • Kosher salt and black pepper to taste
  • 12 pieces of white bread
  • 12 leaves of romaine lettuce

Preparation

Step 1

1. Chop eggs and combine with other ingredients.

2. Toast bread. Divide egg salad evenly between 6 toast slices. Top with lettuce leaves and remaining 6 toast slices.

Makes 6 servings.
