Veal Scallopini in a Lemon Mushroom Cream Sauce

Ingredients

  • 1 1/2 pounds veal scallopini
  • 1 pound mushrooms, sliced
  • 3-4 lemons, zested and juiced
  • 1 shallot, finely chopped
  • 1-2 tablespoons butter
  • 1 cup cream

Preparation

Step 1

Sear outsides of veal on medium-high heat. Remove from pan. Add butter and shallots. Cook until just tender. Add mushrooms and lemon zest. Cook until mushrooms just soften. Add cream and lemon juice. Season with salt and pepper. Add veal and drippings and simmer until veal is rare to medium-rare.
