Quick Oyster Gumbo

Ingredients

  • 1 pint large oysters
  • 2 tablespoons melted fat
  • 2 tablespoons water
  • 1 tablespoon onion flakes
  • 1/4 teaspoon tabasco sauce
  • 2 cups or 1 package frozen cut okra
  • 2 tablespoons flour
  • 2 cups canned, stewed tomatoes
  • 2 tablespoons chopped parsley
  • 3/4 teaspoon salt

Preparation

Step 1

Drain oysters and cut into bite sized pieces.
Thaw okra.
Melt fat in skillet add okra and cook until fairly dry but not brown.
add tomatoes and heat.
mix flour with water to make a paste. add to tomato mixture. cook until thickened.
add oysters and seasonings. simmer about 5 to 8 minutes.
serve over cooked rice.

serves 6.
