Ingredients
- Zest of 1 Lemon
- 1 Tbs Lemon Juice (1/2 Tbs)
- 1 3/4 C Ricotta Cheese (less than 1 C)
- 1 1/3 C Milk (2/3 C)
- 4 Large Eggs (2)
- 1 3/4 C Flour (less than 1 C)
- 1 Tbs Baking Soda (1/2 Tbs)
- 1 C Sugar (1/2 C)
- Butter
Preparation
Step 1
Mix Dry Ingredients:
Flour, Baking Soda, Sugar, Lemon Zest
Mix Wet Ingredients with a Mixer:
Ricotta Cheese, Egg Whites, Lemon Juice,
Mix wet into dry with a spatula. Don't over mix.
Butter griddle, spoon on--They take a while to set up!
1/2 Recipe makes about 8 large pancakes.
