Stuffed Pork Loin

Ingredients

  • 4 lbs. pork loin, butterflied
  • 12 slices bacon, fried crisp and crumbled
  • 3 baking apples, peeled and diced small
  • 1/2 cup feta cheese crumbled
  • 1/2 cup pistachios, chopped
  • 1/2 cup fresh spinach leaves, chopped fine
  • salt
  • pepper
  • 1 Tbsp olive oil
  • kitchen string

Preparation

Step 1

Preheat oven to 350 degrees F. (180 degrees C.).

Fry bacon until crisp, then transfer to a papertowel lined plate to cool. When cool enough, crumble bacon into small pieces and set aside.

Add apples to bacon grease and saute until tender. In a large bowl, combine bacon, apples, spinach, cheese and nuts. Mix until combined. Set aside.

Open up butterflied pork, and season both sides with salt and pepper, then roll the meat back up. Heat oil in a large frying pan over medium high heat. When hot, briefly sear each side of the rolled-up meat until lightly browned.

Transfer meat to a cutting board and unroll. Spread bacon and apple mixture over the meat. Tightly roll up and secure with kitchen string. Place in a roasting pan, fat side up. Roast in oven for 30-40 minutes or until internal temperature reaches 165 degrees F.

Transfer pork loin to a cutting board, covering lightly with aluminum foil to keep it warm. Allow meat to rest for 20 minutes. Slice into 1 inch thick slices
