Ingredients

  • Dry ingredients:
  • 1/2 cup walnuts, chopped
  • 13/4 cup plain flour
  • 11/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • Wet ingredients:
  • 3 large eggs
  • 11/2 cup brown sugar
  • 11/2 cup ripe bananas, mashed (about 4 bananas)
  • 3/4 cup vegetable oil + more for greasing
  • 1/2 tsp vanilla bean paste

Preparation

Step 1

1. Preheat oven to 180C. Using a pastry brush, lightly coat a 9x5x3” loaf tin with vegetable oil. Chop walnuts into smaller pieces to your liking.
2. Combine flour, baking soda, cinnamon and salt in a bowl and mix well. Mash bananas with a fork and add it into a separate large mixing bowl along with the eggs, sugar, oil and vanilla bean paste. Whisk till well combined.
3. Add dry ingredients into wet ingredients and stir until just combined. Fold in chopped walnuts and transfer batter into prepared tin.Smooth the top with a spatula and bake it for an hour or until a skewer inserted in the middle comes out clean.
4. Allow the banana bread to cool slightly before running a paring knife around the inside of the tin. Turn it out onto a cooling rack to cool further before serving.
