Easiest ever chicken soup. No amounts, it all goes in at once.. fantastic!

Ingredients

  • celery chopped*
  • carrots cut down middle then cut in 1-1/2 inch pieces*
  • onions chopped*
  • 4 chicken bouillon cubes
  • dill dried or fresh
  • salt
  • pepper
  • 2 split chicken breasts ON BONE
  • FRESHLY GRATED locatelli or romano cheese, A MUST
  • Tubettini, or other small small pasta
  • ***I usually use about 2 onions, 10-12 carrots, and a whole half of a celery bunch, including the leaves. I just chop right through it all..

Preparation

Step 1

Bring a large pot of water to boil. I use an 8 quart pot. Salt it.

Now chop up some celery and onions. Chop carrots the way mentioned in ingredients. Rinse your chicken split breasts. Trim excess fat if , well, excessive.

When water comes to a boil, toss in the celery, onions,carrots, chicken, some dill, some salt, some pepper,and your bouillon cubes. Bring back to a boil. Turn down to a simmer and cook 1- 1 1/2 hours, uncovered. Turn off heat. Remove chicken, cool. Shred chicken or chop into pieces. ( I shred) (I also use only 1 split breast for the soup, and save the other for chicken salad.)

Boil your tubettini. DO NOT THROW IN SOUP POT!!! It absorbs water and gets too mushy.. like gross. Put some cooked tubettini into each serving bowl. Top with ladles of soup.

NOW THE MOST IMPORTANT.. add some freshly grated locatelli or romano cheese, generously, a must! My granny's recipe and this has to be done. Appears cloudy, but flavor is GREAT!

Freezes well, stores well, better next day. Do not store or freeze with pasta. Always boil pasta to serve. ENJOY!
