Ingredients
- 3 large potatoes, diced
- 4 qt. boiling water
- 3 x3" thin, lean salt pork
- 2 onions, chopped
- black pepper
- 2 cloves garlic, minced
- 1 (28 oz) can diced tomatoes
- 1 (6 1/2 oz) can minced clams or
- 1 1/2 lb fish, diced, or
- shrimp or crawfish
Preparation
Step 1
Boil the potatoes in the water. In a frying pan, fry the salt pork, when a little oil is produced at the onion and pepper. Fry until about half size. Add mixture to the boiling potatoes. When the potatoes are tender, add the fish, clams, etc. Boil for only 5 min.
