Aioli - Garlic Mayo

Can be used for potato salad or other vegetable topping. Good sauce to serve with meat. Works as spread or dip. Food processor needed.

Ingredients

  • 3 egg yolks
  • 4 garlic cloves garlic can be roasted or used as is
  • juice of half a lemon
  • salt
  • black pepper
  • 150 milliliters of extra virgin olive oil or any favorite oil
  • 1 pinch of saffron

Preparation

Step 1

Blend the egg yolks, garlic cloves, lemon juice, saffron and a pinch each of salt and pepper in a food processor. Slowly pour the olive oil into the blender in a steady stream while the food processor is running, until it forms a thick sauce.
Spoon the Aioli into a large mixing bowl and combine with potatoes. This can be poured over vegetables or served in sauce bowl with a ladle.
